PUMPKIN CHEESECAKE BROWNIES

Pumpkin Cheesecake Brownies

Ingredients for the brownie batter

1/2 cup (63g) flour

1/3 (25g) cacao powder

1/2tsp kosher salt

1 stick unsalted butter, plus extra for greasing 

5 oz semi-Sweet Chocolate, finely chopped 

½ cup (110g) brown sugar

1/2 cup (100g) granulated sugar

3 large eggs

1 ½ teaspoon pure vanilla extract


Ingredients for the Pumpkin Cheesecake Swirl

1 package (225g) cream cheese 

1/2 cup (122g) pumpkin puree

1/2 tsp pumpkin spice

1 teaspoon pure vanilla extract

1 large egg yolk

½ cup + 2 tbs (74g) powdered sugar

1/4 teaspoon kosher salt


Method


Heat oven to 350°F. Lightly grease and line the bottom of a 9x9 inch square pan with two pieces of criss-crossed parchment paper leaving some overhang.

In a medium bowl whisk together the flour, cacao powder, and salt.

Melt the butter and chopped chocolate in a medium heatproof bowl. Whisk both sugars into the chocolate once melted.

The mixture will appear grainy, but continue to mix until combined. Whisk in the eggs, one at a time, until mixture begins to smooth out, then add the vanilla.

With a spatula, gently combine flour mixture into the chocolate mixture, and set aside.

For the pumpkin cream cheese filling: In the bowl of a standing mixer, or with a hand mixer, beat together cream cheese until smooth, then add the pumpkin, vanilla, salt, egg yolk, and powdered sugar and beat until smooth. 

Pour all but 1/4 cup of the brownie mixture into the prepared pan, followed by all the cheesecake mixture. Use a spoon and add the remaining brownie mixture over the top in small dollops. To create a swirl effect, gently pass a toothpick through the mixture.

Bake for 30-35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs attached. Place pan on wire rack and allow to cool. Once cool, remove from the pan using the overhanging parchment paper and cut into desired amount of slices.
